I know many of you who are health conscious have tried ground Bison. I just recently purchased some from one of our local supermarkets and you can see in the picture below...that it is pretty obvious by the pink color of the Bison meat on the left...that there will be quite a bit more fat than the dark red color of the Skinny Beef on the right. Pardon my poorly set up photography...but I think it still tells the story!
Below is how they look on the grill before cooking...Skinny Beef on the left, Bison on the right, yes I switched sides when I put them on the grill...sorry, honestly.

Plus, do you think the Bison folks are putting in all of the premium cuts when they can get a premium price from restaurants who want to have a Bison steak on their menu? While typically leaner than fat cows, Bison is still typically fatter than Skinny Beef!
